Naturally-Dyed Deviled Eggs

Here’s a fun natural food coloring experiment that you can eat. Try naturally-dyeing hard boiled eggs for a fun take on deviled eggs.

For dyeing the eggs, you will need:

  • Hard boiled eggs, peeled
  • Turmeric powder – 1/4 cup (yellow)
  • Purple cabbage, shredded – 1/2 cup (blue)
  • Red beets, sliced – 1/2 cup (red)
  • Water – 9 cups divided
  • White vinegar – 3 tbsp divided
  • Table salt – 1 tbsp salt divided

Make hard boiled eggs: cover a dozen or so eggs with cold water. Bring up to a rolling boil. Cover the pot, turn off the heat and let sit on the stove for 12 minutes. Rinse in cool water and put in the fridge until ready to use. Once cool, peel the eggs.

In three separate saucepans, combine each dyeing ingredient with 3 cups of water, 1 tbsp white vinegar and 1 tbsp salt. Bring to a low simmer for 20 minutes occasionally stirring the ingredients.

Strain out food solids from each saucepan and set aside in a bowl. Let cool.

IMG_20160326_192855Tip: wear a smock or apron as you will get color everywhere! 

Place peeled hard boiled eggs in each bowl and soak until desired color is reached. The longer the egg sits, the more saturated the color will be.

We found that the cabbage dye took the longest to achieve a bright blue (almost an hour). For this, we put the bowl of dye back in the fridge with the eggs in it to keep the eggs safe for eating.

Mix and match colors for different effects.

Once the eggs are colored the way you like, carefully cut them in half, scoop out the insides and make your favorite deviled egg filling.
